One Fresh Whole Chicken...My recipe is for a small to medium size.
In a large pot, add One Quart of water depending on the size of the chicken, I make sure the chicken is completely covered with water.
I then add; Three or four sticks of Celery & whole Carrots, One whole Onion, One or Two Fresh Tomates (diced), Two or three Garlic Cloves, Fresh or dried Parsley, Fresh Basil., Salt, Pepper, Turmeric, One tablespoon of olive oil.
Let it boil for about 20 minutes & Simmer for another 30-45 minutes....It all depends on the size of the chicken.
Half a pound each of Ground beef & pork
One Tablespoon of Salt, pepper, paprika, turmeric, chili pepper, fresh or dry parsley, fresh basil leaves, olive oil …add at your preference
One or Two Garlic cloves left in whole
One Onion, Carrot & Celery (add more depending on the size of the vegetables)
One 28oz Can of diced tomatoes & One 6oz Can of tomato paste
Cook meat halfway with no oil, add salt, pepper, paprika, turmeric, now set aside.
Sauté for 15-20 minutes; chopped onion, carrots, celery, tomatoes, salt, pepper & a pinch of sugar (to remove some acidity). Blend together for 2-3 minutes.
Finally, in a large pot, add olive oil, chili & whole garlic clove(s), sauté for a few seconds. Now add the blended vegetables, the meat, tomato paste, fresh basil leaves & parsley…let simmer for a couple of hours (add some water if too thick)
